By Sheila Puliins

A mountain of rice topped with a volcano of spicy, juicy, mouth-watering shrimp.

Ingredients
1 clove fresh garlic, sliced or crushed
1 cup rice
1 pound shrimp
1/2 cup water
1/2 stick margarine or butter
4 or more jalapenos, fresh only
pepper
salt

Directions
Start with a pound of shrimp-any size. If you use a real large size, chop to bite size. Your rice will take about 25 minutes. The shrimp dish 10 minutes. If ingredients are ready the night before it will take 5 minutes the most to put this dish together. Also get rice and be making now because the reminder of the dish cooks fast. Get fresh jalapenos only, start with 4 medium-sized peppers. Slice into slim slices leaving seeds in. Get a clove of garlic peel and slice or crush. Put a 1/2 of stick of margarine or butter, I use margarine, garlic, and jalapenos in a skillet and simmer. After margarine melts, add 1/2 cup of water and let simmer longer. You can also add salt/pepper, the seasoned salt will change flavor. Taste test for heat level, and if it desired, increase heat with peppers and enough season to taste. Add shrimp and put in pan and simmer. Once shrimp is cooked, serve over rice.
